To prepare this dhaba-style paneer masala, first of all, you have to marinate the paneer. Use homemade paneer or soft paneer to make this dish. Take 500 grams of cottage cheese and cut it into cubes. Add salt and ch tsp red chili powder, am tsp garam masala and ic tsp turmeric to taste. Use some water to mix all the spices in your paneer. Keep this paneer aside for some time and till then you can prepare your paneer gravy. Now, keep the pan on medium heat and do not use non-stick for this recipe and dhabas use a large iron pan, which will make your dish more delicious. Add 4 tablespoons of refined oil to it with 2 tablespoons of ghee, as dhaba style dishes use more oil. When this mixture gets hot enough, add all the spices like – 1 teaspoon cumin seeds, 2-3 cloves, cinnamon stick and 2-3 green cardamom. Serve these spices for a few seconds and then add onion. Make sure your onion is almost sliced and cook it for 2-3 minutes. Then, add 10 inches of garlic cloves (roughly chopped) to it and 2 inches of chopped ginger with salt to taste. Cook for 2-3 minutes until onion turns brown. Now add 1 tsp red chilli powder, 2 pinch black pepper powder, 1 tsp kasoori fenugreek leaves, 1/2 tsp garam masala, ro tsp roasted cumin powder, ro tsp roasted coriander powder and 1 tablespoon gram flour. Besan is added to the whole gravy to bind it and make it tasty. Cook all these ingredients for 4-5 minutes and then add 4-5 tsp coriander leaves. Cook for 2 minutes and now add 1 cup tomato puree. Stir well and cook covered onion-tomato gravy for 2 minutes. Then open the lid and cook the gravy for another 4-5 minutes. Finally, we need to fry the marinated cheese in ghee for 2-3 minutes. Pour this fried paneer in the gravy and add water according to your gravy, which is about 1 cup. Mix well and close the pan with a lid. Cook for 2-3 minutes and serve.
